Snow Day!

At around 4:30, I got a call from my school system telling me that tomorrow is officially a SNOW DAY! Yes, I live in the part of the country that was literally covered by snow yesterday. As most of you know, I despite, hate, deplore, etc., snow or any type of wintry weather. I didn't think it was EVER going to stop falling!

I ventured out in the blustery weather to try cleaning off my car, help my niece build a snow-blob (man), and to take some pictures to document the crazy snowfall. Though I was around for the infamous Blizzard of 96, I was only about 9 years old and as a kid you don't realize how paralyzing that amount of snow can truly be!

I've spent the weekend baking Christmas cookies, grading papers, watching movies, cleaning my room, wrapping last minute gifts and eating. A lot unfortunately. I have not left my house, aside from walking in the neighborhood since Friday night; I am beginning to go crazy. However, as you can see, my car is currently parked on the sidewalk in front of my house and sadly, most likely not moving for at least one more day. To top it all off, Antonio is equally as stuck at his house 15 minutes away. I'm getting pretty lonely over here...

Kameron and I did spend some time exploring the neighborhood today. It was fun slipping around on the iced over streets and watching the crazy people try to drive around (and get stuck) in the snow. One guy got stuck directly in front of my house and my dad very nicely had to dig him out!

Even though being inside is starting to drive me crazy, I did get to watch a great Ravens win over the Bears today. And, I'm definitely liking the extended weekend this snow has given me. Now to try and stay warm (and away from the cookies...)

Gobble Gobble Gobble...

HAPPY THANKSGIVING EVERYONE!!!

As I'm sure you will all hear throughout the rest of this unbearable winter season, I'm not a huge fan of cold weather or wintertime in general. Those feelings, however, take a vacation on days like today. I love Thanksgiving! It's the beginning of the holiday season (which I also have mixed feelings about), you get to eat as much creamy fattening food as you want and no one can say anything about it, and it's a time for my family, who doesn't get together too too often, to spend some time with each other. I'm going to take the day today to reflect on what I'm thankful for this year and do a post on that tomorrow. But, I will leave you with some of the preparation pics and a delicious Carrot Cheesecake Muffin recipe that one of my sorority sisters sent to me!

Mixing up the batter - isn't her little hat so cute?!?!

Before going in the oven...

...and after! All ready to take to Antonio's family's house for Thanksgiving!!!

Carrot Cheesecake Muffins

Muffins:
1 pkg Pillbury Carrot Cake Mix (should make about 24 muffins)
1 cup Water (or 1/2 cup water and 1/2 cup Milk)
1/2 cup of oil
3 eggs

Fillings:
1 pkg of cream cheese (Reg works welll/taste better than non fat)
1 egg
*grated lemon peel and sugar to taste

Topping:
3-4 tbsps of melted butter
1/4 cup of chopped nut of your choice (I used Pecans)

Directions:
1. Heat the over to 350. Spray the muffin cups with no-sticks spray or use cupcake shelves.
2. Cut the cream cheese into squares, and beat in a bowl on medium until soft. Add egg, sugar and lemon peel, beat until smooth. Set aside.
3. Empty cake mix into a large bowl, then remove 3/4 cup of dry mix into a small bowl to make topping later.
4. Add Water (or combination of water, milk), oil, and eggs to the remaining mix in the large bowl. Blend until it's smooth and no longer lumpy.
5. Fill each muffin cup 1/2 full.
6. Put 1 full tbsp of cream cheese mix in the center of each muffin.
7. Add chopped nut then butter to the reserved dry mix in the small bowl. Stir with fork until crumbly. (It's okay if some of the dry mix doesn't mix with the melted butter.)
8. Crumble about 1 tbsp over each muffin.
9. Bake for 25 mins. Cool 10 mins in the pan, then remove and place on the baking rack to finish cooling.

Racing in the Rain

Even though the entire weekend has been unseasonably FREEZING and rainy here in MD, this morning I still got up extra early for a good cause. Bright and early at 6 AM, I tugged on a few pairs of my extra thick socks (which absolutely killed me), layered until I didn't think I could layer anymore, and dug out the super fuzzy gloves and scarves. "What in the world could have caused this sunshine baby to even imagine venturing outside on such a day?", you might ask. Well, today was the 25th Annual Race for the Cure to fight breast cancer, here in MD. The fight against breast cancer is one that is near and dear to my heart, as I have had a few friends lose some people who meant a lot to them to the horrible disease.

Around my junior year of college, I was presented with the opportunity to organize a fundraiser for the Susan G. Komen fund, to stop breast cancer. It was called "Passionately Pink for a Cure" and since Phi Mu is the pink sorority, I thought it would be perfect to ask for the help of my sisters to support this great cause! I organized a bake sale of sorts, where all the sisters donated a baked or cute pink item, like awareness ribbons. Susan G. Komen mailed me a TON of pink rubber awareness bracelets and we set up shop in the middle of campus one October day. We offered complimentary baked goods and pink items for those who donated anything, even a penny. People who gave $5 or more were able to take one of the awareness bracelets. In one day, just by asking for any type of donation, we raised over $300 for breast cancer research! Well, it was such a hit that we decided to keep doing it, every year from them on!

Even now that I'm an alumni, my chapter still particpates in Passionately Pink each fall, which makes me feel really proud. I left my mark on Phi Mu in a way that was important and made a difference. Last year, some of the other alumni thought that we should do more for Susan G. Komen. We decided to get a team together to walk in the Race for the Cure! There were about 30 of us that came out last year and it was so much fun that we have made it a yearly tradition!

As I said, I woke up nice and early to head up to UMBC and meet up with Krains. We weren't quite sure where we were going, and even though we got lost briefly (we should have just listened to Blanche, my GPS), we still made it with plenty of time before the race was underway! (I was very proud of us, since neither Krains nor myself are very directionally inclined) Anyway, we met up with the rest of our Phi Mu team, Pink Paws Walking for a Cause, a cute play on words for our national lion mascot, Sir Fidel. We walked around the "Race Village" for about an hour and scooped up a ton of free, PINK! breast cancer awareness items, including some delish peppermint chapstick that I am wearing right now!

Due to the cold and rain, there weren't quite as many team members as last year. Only about 8 of us actually came to the walk this morning, but many others donated to the good cause. We decided to do the full 5K walk, since we were late and could only walk the one mile last year. the 3.1 miles really did fly by, which was good because we were almost posicles by the end! Even though it was freezing and wet, it was still so much fun to get together with some women that I really care about and do something to help others. I can't wait for next year! (Let's just hope that it's a little bit warmer and drier!)
